Decanting old wines, just a few moments before they are served ensures that the wine's clarity is not obscured by sediment developed over time. Decanting young wines before they are served gives the wine a chance to bloom and attain a stage of development that usually requires years of aging. The Riedel Eve Decanter is a dramatic mouth-blown wine decanter in the shape of an upright cobra. When decanting, turn the base in a slow 360-degree rotation to 'charge' the decanter and allow the wine to pour. The Eve is a decanter that also speaks - it emits a gurgle sound as the wine makes its trip through the coil. Eve's long elegant neck means that you can quickly pour a guest across the table without moving from your spot. In using the eve decanter, it acts as a double decanter. What is double decanting? Double decanting is decanting the wine twice, after the first into a decanter, and then back into the original. With Eve, this is not the case. As wine is decanting into the eve decanter, as the base is turned 360 degrees, the wine gurgles and mixes with air, thus creating the second decant. Amazingly, once the is complete, the eve decanter's base design automatically charges 2 ounces of wine in the decanter coil. I have used this decanter at many restaurants, wineries, and, most recently, at Merus Winery. Decanting young wines several hours before they are served gives the wine a chance to bloom and attain a stage of development that usually requires years of aging. The Eve decanter achieves these same results immediately by allowing for the maximum effect of oxygen on the young tannins and aroma of the wine and rounding out the texture; and talk about presentation! This will create the "wow" factor at home, dinner parties, or even to impress your friends! about John Mangano
